Champion's Choice: Raul Rodas, 2024 Brewers Cup Champion in Guatemala

Congratulations to Raul Rodas, World Barista Champion 2012, who recently took first place in the Brewers Cup championship in Guatemala, hence qualifying for the World Brewers Cup in 2025. He used APAX LAB to prepare his water, and he shares with us why the mineral concentrates have had a pivotal role in his success.

1. Why did you decide to use APAX LAB to make your water for the competition?

I used APAX LAB because I believe it gives an incredible boost to both the water and coffee, providing a simple and consistent way to enhance flavour clarity and quality of the final cup.

2. In what ways did the mineral concentrates help you win the competition?

APAX LAB’s mineral concentrates allowed me to increase the PPM (parts per million) of the distilled water while also boosting the brightness and texture of my coffee, especially bringing out the floral notes that I love.

3. What is your favourite APAX LAB profile and why? 

It would be hard to choose! I appreciate and like to use all three profiles — Tonik, Jamm, and Lylac — for their unique characteristics and flexibility in creating different flavour experiences.

4. What was your winning water recipe with APAX LAB? And what coffee did you use it with?

I used a washed Geisha Heirloom from Finca El Líbano, Acatenango, as my competition coffee. My winning water recipe included:

  • 1 gram of Tonik
  • 2 grams of Jamm
  • 4 grams of Lylac
I dissolved those into 1 litre of distilled water.
