Champion's Choice: Sonam Sherpa, 2024 UAE Aeropress winner

Sonam Sherpa recently took first place in the Aeropress championship in UAE using a natural coffee from Yemen, paired with APAX LAB for his water.

Why did you choose APAX LAB to make your water for the competition?

Water quality significantly impacts coffee flavour, and APAX LAB’s mineral concentrates offer a simple solution. With just a few drops, you can easily remineralise water. This consistency in water quality is crucial for brewing excellent coffee.

In what ways did the mineral concentrates help you win the competition?

APAX LAB mineral concentrates bring coffee to life. I specifically used JAMM [2] & TONIK [1] profiles. This combination enhanced the sweetness, vibrancy, and richness of my coffee, contributing to my success in the competition.

What is your favorite APAX LAB profile? 

It’s a bit tough to choose, as I usually blend them together for better results. If I had to pick one, I would say the JAMM [2] profile, as I love how its unique characteristics enhance the sweetness and richness of the coffee experience.

Finally, what was your winning water recipe with APAX LAB? And what coffee did you use with it?

My winning recipe involved using 2 grams of JAMM [2] and 1.5 grams of TONIK [1] per liter of water. The official competition coffee I used was a Yemen Natural.

As for your winning AeroPress recipe:

  • Use 18 grams of coffee, ground to a medium-fine size.
  • Heat water to 70°C.
  • Set up your AeroPress using the inverted technique.
  • Add 40 grams of water to the coffee, stir 8 times, and let it bloom for 40 seconds.
  • Add more water to reach a total of 200 grams.
  • Stir 10 times and remove the crust.
  • Attach the cap with 2 paper filters. At 2 minutes, flip the AeroPress onto a decanter.
  • Begin pressing at 2:30 minutes.
