The Sudan Rume variety, an ancient coffee cultivar originating from South Sudan's Boma Plateau, is celebrated for its exceptional cup quality and complex flavour profile. Despite its low yield, this variety offers a unique sensory experience, often featuring notes of lemongrass, ginger, and tropical fruits. At Café Granja La Esperanza's Las Margaritas farm in Colombia, meticulous natural processing methods are employed to enhance these distinctive flavours, resulting in a cup that is both vibrant and nuanced, making it one of the most prized coffees in the world.

In their innovative approach, Café Granja La Esperanza also offers a Hybrid Washed process for the Sudan Rume variety. This method begins with handpicking cherries at peak ripeness, followed by a two-phase fermentation: an initial 14-hour open-tank fermentation to enhance natural flavours, and a subsequent 18-hour anaerobic fermentation to develop an extraordinary flavour profile. After depulping, the beans undergo a final 24-hour aerobic fermentation. This meticulous process results in a cup profile that is both vibrant and nuanced, with main notes of mandarin, peach, ginger, brown spices, and fresh mint. The silky body and long-lasting finish make this Sudan Rume Hybrid Washed one of the most prized coffees in the world
