At El Diviso, the Natural process is employed with precision to enhance the variety’s intrinsic characteristics. Cherries are hand-harvested at peak ripeness, selected with rigorous quality control, and placed in sealed fermentation tanks for an extended period of controlled anaerobic fermentation. This phase allows for the development of unique aromatic compounds, deepening the fruit-forward intensity of the coffee. After fermentation, the cherries are slowly dried on raised African beds, where careful monitoring ensures even dehydration and preservation of volatile flavour compounds.

The resulting cup is a sensory explosion, showcasing juicy tropical fruit notes, vibrant citrus acidity, and velvety sweetness. Expect an elegant interplay of passionfruit, mango, and red berries, layered with floral undertones and a lingering honey-like finish.
