Once again, Diego Samuel Bermudez is revolutionising the coffee industry with an innovative fermentation technique known as anti-maceration. This process involves creating a vacuum environment where the pressure in the fermentation tank drops below atmospheric levels, approaching zero bar. In this near-void setting, unique microbes, including specific yeasts and bacteria, become active, leading to the development of distinctive flavor profiles.
In this particular application, the Caturra variety undergoes the anti-maceration process. The cherries are meticulously harvested at peak ripeness, then disinfected with ozone before being placed in stainless steel vacuum chambers for a 24-hour fermentation with a specialized culture medium. This method induces a reverse osmosis reaction, altering the cellular structure of the coffee and enhancing yeast performance during fermentation.
This coffee is incredibly bright, juicy and intensely sweet. We love its phosphoric, sparkling acidity, intense sweetness and round, jammy body.
We recommend brewing this coffee using 1 / 2.5 / 0.5 g/L of TONIK / JAMM / LYLAC to put the spotlight on the acidity and bring an more texture and roundness to the coffee.
