The Geisha variety, renowned for its exceptional cup quality and complex flavour profile, is meticulously cultivated at Finca La Divisa in Colombia's Quindío region. Managed by Sebastián Gómez and his father, John, this 13-hectare farm, situated at elevations between 1,700 and 1,800 meters above sea level, is dedicated to producing high-quality coffees through innovative practices.
In this particular lot, the Geisha EF2 Natural, the cherries undergo an Extended Fermentation (EF2) Natural process. This method involves an initial aerobic fermentation for 24 hours, followed by placing the whole cherries inside GrainPro bags filled with CO₂ for an extended period. This meticulous process enhances the coffee's inherent sweetness and complexity.
The resulting cup offers a harmonious blend of maraschino cherry, apricot, and floral notes. The initial sip reveals a burst of sweet maraschino cherry, complemented by the subtle tartness of apricot, adding depth and a refreshing fruitiness. As the flavour develops, delicate floral undertones emerge, contributing to the coffee's complexity and a pleasant, lingering finish.
