COLOMBIA - Finca El Paraiso, Anti-maceration Geisha
Once again, Diego Samuel Bermudez is shaking the coffee world with a new, unseen, fermentation technique called anti-maceration. Instead of increasing the pressure of the fermentation tank by adding CO2 or Nitrogen, Diego creates a vacuum environment where the pressure of the fermentation tank drops below 1 bar, the atmospheric pressure. With this technique, he aims to get as close as possible to 0 bar pressure, essentially recreating the conditions of space, with no gas, no oxygen available. In this environment, different microbes (yeasts and bacteria) are active, which creates a very unusual cup profile.
This coffee is incredibly bright, juicy and effervescent. We love its phosphoric, sparkling acidity, intense sweetness and delicate, silky body.
We recommend brewing this coffee using 1 / 2.5 / 0.5 g/L of TONIK / JAMM / LYLAC to put the spotlight on the acidity and bring an more texture and roundness to the coffee.
