The ECHO process begins with harvesting perfectly ripe Geisha cherries, measuring 21-24 on the BRIX scale. The cherries undergo a meticulous second selection before processing. After selection, the cherries are pulped, leaving a specific amount of fruit on the bean.
A certain quantity of cascara, or the coffee cherry skin, is added to the tank and mixed with the freshly pulped coffee. The mixture is then left in the tank for an extended period exceeding 50 hours, during which it is continuously monitored, and data is recorded.
The primary units observed are pH, temperature, and CO2 levels. Ambient temperatures are also monitored and controlled to ensure consistency in the process.
This coffee is elegant, floral and sweet.
We recommend brewing this coffee using 0.5 / 0.5 / 3 g/L of TONIK / JAMM / LYLAC to make it silkier, more floral and elegant.
