PANAMA - Finca Deborah, Geisha Interstellar
Interstellar is described by Jamison Savage as an extended-duration, experimental yeast composition with anaerobic properties, making it one of the most technical processes to execute. Ultra-ripe whole cherries are placed inside stainless steel tanks, and a yeast inoculation is added. The cherries spend over 150 hours in the yeast bath. Once the targets are met, the coffee is placed in shaded raised beds, where it remains away from UV light until ideal moisture levels are achieved.
The intention behind inoculating this Geisha is to strategically enhance aromatics, refine acidity, and induce further body into the cup profile.
This coffee is tropical, delicate and silky.
We recommend brewing this coffee using 2 / 0.5 / 1.5 g/L of TONIK / JAMM / LYLAC to highlight the tropical acidity and make it even more vibrant.
