PANAMA - Finca Deborah, Geisha Nirvana
Nirvana is a nitrogen-macerated natural Geisha. To Jamison, this means the cherries are harvested when they are nearly overripe, reading 24+ BRIX. They're hand-selected and placed into a sealed stainless steel tank for an extended period, with nitrogen periodically infused into the tanks while monitoring pH and keeping a cool temperature. Once the targets are met, the coffee is placed in shaded raised beds, away from UV light until ideal moisture levels are achieved.
You'll find a very complex flavour profile and incredible mouthfeel. The flavours are blue and purple, with lavender and lilac florals, and mixed berry tones. The mouthfeel is full, round, and coating, with a whole-cream type of appeal. This process takes this Geisha to a whole new level.
This coffee is complex, sweet and floral.
We recommend brewing this coffee using 0.5 / 0.5 / 3 g/L of TONIK / JAMM / LYLAC to intensify the floral characteristics.
