PANAMA - Finca Deborah, Geisha Parabolic
Parabolic is a collaboration between Jamison of Finca Deborah with its surrounding neighbour producers with aim of elevating coffee producers knowledge in processing and also for a betterment of these producers quality of life. Geisha cherries of 21-24 BRIX are put in Hermetically sealed steel tanks for 100 hours, where they are introduced with Carbon dioxide to help boost the deep fruit notes of this coffee. The coffees are then dried for 20 days on African raised beds within a green house that maintains steady control of temperature, humidity and airflow until it reaches 11% moisture content.
This coffee is fruity, jammy and sweet.
We recommend brewing this coffee using 0.5 / 2 / 1.5 g/L of TONIK / JAMM / LYLAC to put the spotlight on the sweetness and the texture of this coffee.
