This lot undergoes a meticulous 72-hour anaerobic natural process, enhancing its unique characteristics. In the cup, it presents a complex and elegant combination of tropical and dried fruit, with notes of strawberry, dried figs, red plums, and a grapefruit acidity on the finish. This exquisite profile reflects the Janson family's dedication to quality and innovation in coffee cultivation.
The Janson Coffee Farm, established in 1941, is nestled between the Tisingal and Barú volcanoes in the Chiriquí Highlands of Panama. Spanning elevations from 1,350 to 1,700 metres above sea level, the farm benefits from a unique microclimate ideal for cultivating specialty coffee varieties. The Janson family employs sustainable farming practices, maintaining a balance of nutrients in the soil without the use of pesticides or herbicides. Their commitment to environmental stewardship includes separating plantations with forested areas that serve as natural barriers against pests and protect the region's flora and fauna.
