
Champion's Choice: Bavis Kwong, 2025 Hong Kong Brewers Cup Champion
In this edition of the Hall of Fame, we're excited to feature Bavis Kwong, the 2025 Brewers Cup Champion from Hong Kong. Inspired by an electrifying moment at the 2022 World Brewers Cup, Bavis transformed her deep passion for brewing and roasting into championship success. Tell us more about the Brewers Cup—what makes this competition special to you?
The Brewers Cup holds a deeply personal meaning for me. At the 2022 World Brewers Cup Championship, I was incredibly fortunate to accompany my mentor, Ching, as he represented Hong Kong on the world stage. Witnessing champions from across the globe pour their passion into every cup was electrifying. At that moment, a dream took root in my heart: One day, I want to stand on that stage and share my story through coffee.
Water quality is crucial in brewing—how did it impact your approach to the competition?
Since coffee is 98% water, it’s like the seasoning in a dish - subtle changes redefine the entire experience. For competitions, mastering water isn’t optional; it’s the foundation of clarity, balance, and unlocking a coffee’s hidden potential.
How did you first hear about APAX LAB, and what made you choose our products to craft your competition water?
APAX caught my eye while co-hosting the 2024 Hong Kong Aeropress Championship, where they were sponsors. I was instantly drawn to its precision and flexibility.
In what ways did the mineral concentrates help you achieve the best expression of your coffee and contribute to your win?

Which APAX LAB profile is your favourite for brewing filter coffee - TONIK, JAMM, or LYLAC? Why?
I think they each shine with different coffees, but I lean toward LYLAC. It consistently highlights the delicate floral elegance that I love the most!
What coffee did you choose for your competition routine, and why was it the perfect fit for your approach?
I selected a custom blend of Panama Geisha: Mountain Totumas and Lost Origin x Finca Maya, sourced via Tri-Up. This combo created an unforgettable floral bouquet with vibrant acidity, tropical fruit layers, and a velvety mouthfeel.
What was your winning water recipe with APAX LAB, and how did it influence the final cup?
I used 10 drops of LYLAC per 1.8L of distilled water to reach a TDS of 40ppm. This recipe intensified the coffee’s floral character and amplified its juiciness.
For those new to crafting their own water for filter coffee, what advice would you give them?
Start simple—try APAX’s presets (TONIK, JAMM, LYLAC) side-by-side with the same coffee. You’ll taste how water shapes flavour. There’s no universal ‘best’ water; it’s about synergy with your beans. And have fun! Water is your creative toolkit.
