How did you first hear about us, and why did you decide to use APAX LAB to make your water for the competition?

Back in April last year, while competing in Chicago, I needed a reliable source of water for the World Brewers Cup. APAX LAB became my go-to solution, allowing me to adjust my water precisely according to my coffee and preferences.

In what ways did the mineral concentrates help you win the competition?

Adjusting my water’s mineral composition gave me the flexibility to accentuate specific flavor and tactile attributes of my coffee. This level of control was essential to fine-tune my brew for the competition.

What is your favourite APAX LAB profile and why?

It really depends on my coffee and my desired outcome. I enjoy using the profiles in conjunction to create a harmonious balance, tailoring the mineral composition to bring out the best in each brew.

What was your winning water recipe with APAX LAB, and what coffee did you use it with?

For my winning recipe, I used 2 drops TONIK | 4 drops JAMM | 2 drops LYLAC per 250ml of water. My coffee was a blend of two complementary coffee beans: one experimentally naturally processed and the other depulped and washed. Both were of the same variety but had vastly different characteristics, which the water recipe harmonised beautifully.

Finally, what piece of advice would you give to someone who is just getting started with making their own water?

Every coffee is unique, so my advice is to experiment freely with the mineral concentrates. Don’t be afraid to think outside the box — creativity and exploration can lead to extraordinary results.
