We spoke with Valentina about her competition journey, the role of water in her preparation, and how APAX LAB helped her shape her winning cup.
Tell us more about the Brewers Cup. What makes this competition special to you and why did you decide to compete this year?
Filter coffee is my favorite drink, and I love how creative the Brewers Cup Competition is as there are so many variables! What I find most inspiring is the learning curve: you gain so much knowledge in such a short period of time. That growth and constant discovery are what truly motivated me to compete this year.
Water quality is crucial in brewing — how did it impact your approach to the competition?
For me, water became a defining element in my preparation. Experimenting with different APAX profiles reshaped the way my coffee expressed itself in the cup. Being able to adapt to different conditions is crucial, and a consistent water profile makes that possible.
How did you first hear about APAX LAB, and what made you choose our products for the competition?
My partner Diego introduced me to APAX two years ago. Having our own coffee shops means we are always looking for innovation and ways to improve. I’ve experimented with different water compositions, and my results with APAX were consistently impressive, which made it an easy choice for competition.
In what ways did the mineral concentrates help you achieve the best expression of your coffee and contribute to your win?
They enhanced the aromatic complexity and sweetness of my coffee, while also improving structure and balance. The final cup felt much rounder and more refined, allowing the coffee to fully express its character.
Which APAX LAB profile is your favourite, and why?
I’ve always been a big fan of TONIK, but lately I’ve been using KONFLUX more often because it really helps improve balance and structure in my coffees.
What coffee did you choose for your competition routine, and why was it the perfect fit for your approach?
I used a blend of two coffees: Finca Los Cenizos Geisha Natural Mosto and Colombia Las Margaritas Geisha Natural. The Panama was extremely floral and delicate, while the Colombia brought strawberry notes and texture. Blending these two coffees allowed me to create a cup that combined elegance, complexity, and structure.
What was your winning water recipe with APAX LAB, and how did it influence the final cup?
I used 20 drops of KONFLUX per 1 litre of demineralised water, resulting in a total mineral content of 40 ppm. This recipe enhanced clarity and sweetness while maintaining a silky texture, helping the flavours feel more integrated and expressive.
What is your motto in relation to coffee competition?
Just enjoy the process — every part of it: the research, writing a meaningful speech, developing new water recipes, and even the stressful moments. Growth happens in all of it.
For those new to crafting their own water for filter coffee, what advice would you give them?
Experiment with everything and never take anything for granted. Even a single drop can change the perception of a coffee. Take notes, analyse your results, and draw your own conclusions. There are no right or wrong answers — it ultimately comes down to personal taste.
