Lost Origin–Gales is one of the coffees Simon Gautherin used on stage at the World Championship (placing 2nd in the World), including during the first round and finals.
Produced at Finca Gales and processed by Lost Origin, this Panama Geisha uses a yeast anaerobic natural process. It was roasted by TANAT and DIFFERENTE for Simon’s competition routine, then frozen just before peak to preserve its expression.
A rare remaining release from Simon’s World Championship coffee selection. Each dose includes a Weber Workshops single-dose container.
Country of origin: Panama
Process: Yeast Anaerobic Natural
Tasting notes: Pineapple, peach, mango
Net weight: single dose of 14g
Recommended APAX Recipe
Per litre of demineralised water:
2g JAMM | 0.5g LYLAC | 0.5g KONFLUX
A sweetness-focused recipe designed to bring roundness, depth and structure, while keeping enough florality and texture to support the coffee’s expressive fermentation character.
