Mount Totumas is a washed Panama Geisha selected as one of Simon Gautherin’s World Championship backup coffees.
Although it was not used on stage, it was part of the competition selection and continued to develop beautifully after the event. Roasted by TANAT and DIFFERENTE, it was frozen just before peak to preserve its condition.
A very limited number of competition doses are available.
Country of origin: Panama
Process: Washed
Tasting notes: Jasmine, blackcurrant, orange
Net weight: single dose of 14g
Recommended APAX Recipe
Per litre of demineralised water:
1g TONIK | 1g LYLAC | 1g KONFLUX
A balanced recipe designed to bring brightness, florality and structure in equal measure, which is ideal for supporting clarity while giving the cup a longer, more complete finish.
